I get asked about coconut water a lot. It seems to be a huge trend in the fitness and all-natural eating world. I've been paying attention to this trend, experimenting with it at home and have had the chance to work with Vita Coco on a few projects. My love of coconut water has grown and I'm beginning to enjoy it's refreshing flavor.
If your curious as to what exactly is coconut water, Vita Coco has put together this cool pictorial below to give you an idea of how it's made, the nutrition facts, and some interesting new research on it. I'm a very visual person so I found this flow chart to be quite helpful.
I have been using coconut water most frequently in my morning smoothies but also experimented with using it as poaching liquid in my Coconut Orange Poached Salmon (huge success). I like that coconut water is a great source of potassium, which has been found to help maintain healthy blood pressure. It's also low in calories, which is one of the reasons I like using it in my smoothies.
And now, it's time for the giveaway --- a whole case of Vita Coco coconut water! What a prize! Enter below and be sure to tell me how you like to enjoy coconut water.

started drinking coconut water after long runs instead of sports drinks and love that it's a more natural way to hydrate and replenish lost nutrients. And I actually really like the taste.
