Disclaimer: If you have this idea that all I do every day is exercise for hours and eat brussel sprouts by the truck full, I encourage you to just stop reading. While I do love both of these things, I'd hate to dissappoint you.
It's only happened a few times in my adult life. In fact, I think I can count the number of times I have fried something on one hand. The last time was New Year's Eve 2011 - shrimp tempura for a make-your-own-sushi station at our party.
I'm not sure what got into me last tonight. I had planned to make Mahi Mahi for dinner but wasn't exactly sure how. I think I was inspired by making my hubby happy (as he usually just kind of tolerates fish), the can of Land Shark in the fridge, and this recipe that I've been meaning to try for about 3 years.
I don't eat much fried food. It's just not my thing. But, I do enjoy some fish and chips from time to time. This recipe is really easy and a great choice for a fun meal. If you serve fish sticks at home, consider making this recipe instead. Then you'll know exactly what's going in your food.
So let me solute the weekend, cooking with beer, "fun" food and a special treat with this recipe. It's one that would make Jamie Oliver proud.
P.S. My hubby went to bed last night and woke up this morning sayin the same thing -"That fish was soooo good!" Mission accomplished. =)
Beer Battered Fish and Sweet Potato Fries
4 fish filets - Thick, white fish is best like mahi, cod, halibut
4 cups vegetable oil
1 cup flour
1 cup of beer - Choose whatever you like to drink. I used Land Shark but I think this would be great with any lager, amber or dark beer
1 tsp baking soda
1 tbsp honey
Kosher salt
Pepper
3 sweet potatoes, cut into 1/2" slices
Olive oil cooking spray
- Preheat oven to 450 degrees. Lay sweet potato slices on baking sheet. Spray olive oil and sprinkle with Kosher salt. Bake for 20-25 minutes, until browned and tender.
- Meanwhile, pour oil into a medium size dutch oven and heat over medium-high heat till it reaches 350 degrees.
- In a medium bowl, whisk together flour, 2 tsp salt, and 1 tsp baking soda. Slowly add the beer and honey and continue to whisk until smooth.
- Put a layer of paper towels on a large plate or baking sheet and set near pot of oil.
- Pat fish dry and cut into desired shape. Sprinkle lightly with salt.
- Drop fish into batter to coat. Remove and shake off excess. Carefully drop fish into oil and cook until golden, about 3-4 minutes for small pieces and 6-7 minutes for large pieces. Turn pieces in oil to evenly cook. Work in batches so to not crowd the pot. Remove from oil and place on paper towels. Serve immediately.
