As you may have figured out from reading my blog long enough, we love caprese salad. All three of us just can't get enough of tomatoes, fresh mozzarella, basil, and balsamic vinegar. The combination is just heavenly.
I often bring caprese salad to parties and get togethers. Sunday night we had dinner with my friend LeAna, of a Small Snippett, and her family. I offered to bring caprese salad but wanted to switch it up a bit. After visiting the farmers market on Saturday and spotting these beauties, I knew just what I wanted to do.
Using three different colors of tomatoes and adding avocado slices changed up my traditional approach just enough to make me happy. I arraged everything on a platter so that you could pick and choose what colors you wanted. I think it turned out beautiful and as always, very tasty.
To sum it up, all you need are tomatoes, fresh mozzarella, fresh basil, avocado, and balsamic vinegar. Arrange them however you like and drizzle the vinegar over the top. Easy!
Avocado Caprese Salad
2 avocados
4 large tomatoes
1 ball (about 8 oz) fresh mozzarella cheese
1 bunch fresh basil
1/3 cup balsamic vinegar
1/3 cup extra virgin olive oil
Directions
Slice avocado, tomato, and mozarella into 1/4" thick slices. Arrange on a platter in a ring or rows, alternating between the three (or leave the avocado in the center as pictured). Finely chop (chiffonade) basil and sprinkle over the avocado, tomato and mozzarella. Drizzle the olive oil and vinegar over the top as well, distributing evenly. Serve immediately.
