I've had lots of requests for posting my weekly meal plans. I am happy to do this but I am human and they don't always happen like I them to happen. Oh life! But with all good intentions, I will make Mondays on this blog, "Meal Plan Mondays" and I will post our dinner menu for the week. Sometimes I use recipes and most of the time I just have the main idea and I season or tweak as I cook. Knowing that you all may not be as flighty as I am while cooking, I will also try to provide the recipes (most likely throughout the week).
As you will notice from my actual meal planning notepad above, I make all kinds of notes about the week. This week I've noted what I want to add to Jackson's diet, the family dinner we have planned at Ruby Tuesday's on Tuesday and Brian's weight meet on Wednesday. I typically don't plan all the way to Friday because our plans for the weekend are pretty fluid. We have a wedding on Saturday so we may or may not eat at home on Friday. I will probably work on getting some friends together (my favorite).
So without further adue, here is the actual plan of attack for the week.
Monday - grilled chicken breast, caprese salad, and a "string" salad of zucchini, yellow squash, and cucumber. (I'll post that recipe tomorrow.)
Tuesday - Dinner at Ruby Tuesday where they have an amazing salad bar.
Wednesday- Grilled mahi mahi fish (I actually swapped my meat around after going to the store this morning) over fresh salads and strawberries.
Thursday - Grilled vegetable mix (waiting to see what's delivered from Black Hog Farm this week) over multi grain pasta with ricotta.
